Our family has been making this delicious Pasta Salad recipe for years and it’s SO easy! It’s flavorful, crunchy, crisp and colorful. Not to mention it holds up great in the fridge, we always love having it on hand and the leftovers only get better. It’s perfect for entertaining and a total crowd pleaser every single time

What You'll Need:

+ 1 pack fusilli pasta (with all other ingredients added, serves about 5-6)

+ ½ can garbanzo Beans thoroughly rinsed and strained (whole can if you prefer)

+ ½ cup cilantro chopped

+ 1 cup cherry tomatoes halved (I used multi-color to make it more vibrant)

+ 1 cup cucumbers, quartered and sliced

+ ½ cup red onion diced

+ ½ cup celery diced

+ ½ cup to 1 cup bell peppers diced (any or all colors)

+ ½ cup parmigiano reggiano, finely grated

+ ½ cup asiago, shredded

+ ½ cup parmigiano reggiano, finely grated

+ ½ to 1 cup salami, cubed

+ Drizzle of olive oil

+ Drizzle of your favorite Italian salad dressing (anything you love most will work well in this along with EVOO and seasoning)

+ Salt and pepper to taste

+ Crushed red pepper flakes if you like spice

Steps:

1. Cook pasta al dente (strain with cold water)

2. Prep all of your ingredients (dice, chop, cube)

3. Combine all ingredients in a large mixing bowl

4. Enjoy your pasta salad!

*Tip: make sure your pasta is pretty al dente, it will hold up much better! Also, season the pasta before adding the rest of the ingredients for extra flavor and adjust by tasting throughout. It keeps in the fridge for days on end and in my opinion only becomes more and more flavorful.
