Auntie Bug’s Easy Creamy Tomato Basil Tortellini

If you haven’t tried this pasta yet, don’t waste any more time! Andrew and I were floored by how delicious and easy this was the first time we tried it. We’ve been making it ever since! When you’re short on time but want a hearty and comforting meal, this is it! It’s creamy, cheesy and perfectly flavored. This is another winner inspired by my Auntie Bug. hope you love it! Enjoy!

What You'll Need:

+ Store bought ravioli or tortellini (make it easy!)

+ Broccoli

+ 4 tbsp. salted butter

+ 1/3 cup diced sweet onions

+ I clove garlic finely diced

+ 1 tsp. dried basil

+ 3 oz. tomato paste (I used Mutti and Cento is amazing)

+ 1 cup heavy cream

+ 3/4 cup parmesan (more to thicken if needed)

+ 1/4 cup pasta water

+ Salt & pepper to taste

+ Garnish with freshly grated parmesan and fresh basil

Steps:

1. Bring large pot of salted water to boil while you start the sauce (directions below). Once boiling add tortellini and broccoli to the water to cook.

2. In a large skillet melt 4 tablespoons salted butter, add 1/3 cup diced sweet onions and cook over low heat 3-4 mins. Add 1 clove finely minced garlic and simmer on low another few minutes. Add 1 teaspoon dried basil and 3 oz. tomato paste, cook a few more minutes.

3. Add 1 cup heavy cream and stir over low heat until heated through then add 3/4 cup grated parmesan cheese (more for thicker sauce). Stir and continue to heat, then add 1/4 cup of the hot pasta water, stir and cook 3-4 more mins. Add salt to taste. If the sauce is too thin add more parmesan, if too thick add a bit more pasta water. Add tortellini, stir to combine, and serve.
