Easy & Delicious Pastina

This might be the easiest recipe I’ve ever shared and only requires 4 ingredients. Pastina has always been my ultimate comfort food and something my mom would make for me while growing up. Whether I was sick or it was just a bad day, this never failed to make me feel better. Traditionally, pastina refers to any tiny pasta shape and there are countless varieties. You can add veggies, eggs, lemon – really anything you’d like. Every family has their own “right way” of doing this but the beautiful thing about cooking is that there’s truly no wrong way. What You'll Need:

+ 8 cups chicken broth (homemade or store-bought)

+ Parmigiano Reggiano rind

+ 1 pack pastina (approximately 16 oz.)

+ Freshly grated parmesan to top

+ Juice of 1 lemon

+ Salt & pepper to taste

Steps:

1. Bring broth to a boil.

2. Add pastina, parmesan rind, and freshly squeezed lemon juice, salt & pepper.

3. Cook until pastina is tender and consistency is slightly creamy. If desired, you can add 1-2 tbsp. butter at this point.

4. Serve and top with a mountain of parmesan and additional salt & pepper.
