Festive Kale Salad

This Festive Kale Salad is the perfect salad for any Thanksgiving and holiday entertaining! I’m obsessed with the combination of ingredients and it doesn’t hurt that it’s pretty healthy either. It’s light, flavorful and so easy to throw together! I also love that the quinoa, pomegranate seeds, and slivered almonds give it the perfect crunch. I could honestly eat this every day.

What You'll Need:

+ 2 large bunches kale (approximately 8 cups washed, massaged, finely chopped)

+ 2 cups quinoa

+ 1 apple, finely diced

+ 1 cup red seedless grapes, sliced

+ 1 cup pomegranate seeds

+ 1/2 cup dried cranberries

+ 1/2 cup slivered almonds

+ Lots of freshly grated parmesan to top!

Dressing

+ 1/2 cup EVOO

+ 2 tbsp. white balsamic vinegar (champagne vinegar works well also)

+ Juice of 1 lemon

+ 1 shallot, finely minced

+ 1-2 tbsp. honey (depending on preference)

+ Salt & pepper to taste

Tip *Make sure your kale is very finely chopped. Sprinkle with salt and drizzle with a bit of the dressing to massage kale prior to mixing all other ingredients to make it more tender. Enjoy!
