Garlic Feta Roasted Crispy Potatoes

You feta believe it doesn’t get much better than these Garlic Feta Roasted Crispy Potatoes! My Crispy Garlic Feta Fries have to be one of my favorite recipes EVER and I thought this version would be fun spin on the original! They’re full of flavor, texture, and garlicky goodness. The perfect easy side dish for any meal, or snack – savory, crispy, and so delicious! Hope you love them – enjoy!

What You'll Need:

+ 2 lbs. mini potatoes

+ 4 tbsp. EVOO, divided

+ 2 tbsp. Unsalted butter, melted

+ 2-4 cloves garlic, finely minced (depending on preference)

+ 1-2 tsp. garlic salt

+ 1/2 tsp. Cracked black pepper

+ Feta (I love using French Feta for this – it’s more creamy and mild but any feta works!)

+ 1 tsp. Crushed red pepper flakes, adjust based on spice preference

+ 2 tbsp. Fresh flat leaf parsley, chopped

+ Flaky sea salt to taste

Steps:

1. Preheat the oven to 425 degrees.

2. Boil potatoes in salted water for approximately 20 minutes or until fork tender. Strain and let cool.

3. Place potatoes onto a parchment lined baking sheet and use a fork, mason jar, or potato masher to press down gently.

4. Coat with olive oil, melted butter, garlic salt, and pepper.

5. Bake for 25-30 minutes until crispy and golden brown.

4. Once potatoes are done: In a small saucepan over low-medium heat combine olive oil, garlic and crushed red pepper. Cook for 3-4 minutes being very careful not to overcook garlic – you are only trying to heat and infuse, not fry!

5. Plate potatoes, pour garlic oil overtop and garnish with LOTS of crumbled feta and fresh chopped parsley. Enjoy!
