The Crispy Garlic Feta Fries I made last year have to be one of my favorite recipes EVER and I thought it would be fun to recreate something similar with crispy smashed potatoes! These Garlic Feta Roasted Potatoes are full of flavor, texture, and garlicky goodness. You feta believe it doesn’t get much better than that 🤣 They’re easy and the perfect side for any meal. Hope you love them – enjoy!

What You'll Need:

+ Approximately 2 lbs. Mini Potatoes

+ Extra Virgin Olive Oil (to coat for roasting plus 2-3 tbsp. for sauce)

+ 2 tbsp. Butter, melted

+ 2-4 Cloves Garlic, finely minced (depending on preference)

+ Lawry’s Garlic Salt (generously season)

+ Fresh Cracked Black Pepper

+ French Feta (much more creamy and mild but any feta works)

+ Crushed Red Pepper Flakes (I use approximately 1tsp. – adjust based on spice preference)

+ Flat Leaf Parsley, chopped for garnish

+ Drinking: Kings of Prohibition Shiraz

Steps:

1. Boil potatoes in salted water until fork tender for approximately 20 minutes until fork tender. Strain and let cool.

2. Place potatoes onto baking sheet and use a fork/potato masher/jar to press down gently.

3. Coat with olive oil, grass fed butter (optional), garlic salt, and pepper. Bake at 425 for approximately 25-30 minutes until golden and perfectly crispy.

4. Combine olive oil, garlic and crushed red pepper. Stir on low/medium heat for only 1-2 minutes. Do not overcook garlic – you are only trying to heat and infuse not fry!

5. Plate and top with crumbled feta and fresh chopped parsley. Enjoy!
