My Favorite Peach Crumble

I can never let peach season come to an end without making my favorite peach crumble. It may be one of the easiest desserts you can make but it’s also one of the most delicious. It’s not overly sweet and perfect for a weeknight treat or to serve while entertaining. And of course, you can’t enjoy it without a big scoop of vanilla bean ice cream. What You'll Need:

+ 6 large peaches, sliced

+ Zest of 1/2 lemon

+ Juice of 1 lemon

+ 1/4 cup sugar

+ 1/2 tsp. pumpkin spice

+ 1/4 tsp. cardamom

+ Paste of 1/2 vanilla bean

+ 1 tsp. vanilla extract

+ Pinch of salt (¼ tsp.)

Crumble:

+ 1 cup flour

+ 1/2 cup oats

+ 1 cup brown sugar

+ 1 stick butter, melted

+ 1/2 tsp. pumpkin spice

+ 1/2 tsp. salt

Steps:

1. Preheat the oven to 375 degrees.

2. In a large mixing bowl, add peaches, lemon zest, lemon juice, sugar, pumpkin spice, cardamom, vanilla bean paste and vanilla bean extract. Mix until well combined and set aside.

3. In a separate mixing bowl, add all crumble ingredients and stir to combine. Make sure to leave the larger chunks and not break them up too much.

4. Add the peach mixture to a 9×11 inch baking dish, followed by the crumble on top.

5. Bake at 375 for approximately 40-45 minutes or until golden brown. I personally like to broil it for an additional 2-3 minutes to get the crumble extra crispy. Serve with vanilla bean ice cream and enjoy!
