For me, there’s nothing more nostalgic than a cup of this Nordstrom Roma Tomato Basil Soup so we’re making it at home. Growing up, my favorite thing to do at the mall was to go to the café with my mom. I would have this soup and with the crispy parmesan crostini on the side. And, I LOVE shopping so that’s saying a lot. When Nordstrom dropped the recipe back in 2020 I couldn’t make it fast enough. This is my version with a few tweaks and it’s one of our favorite comfort foods to make during fall and winter. It’s creamy, flavorful and so delicious. I love it so much I could eat it every day. It’s a total crowd pleaser, you guys HAVE to try it!

What You'll Need:

+ ¼ cup EVOO

+ 2 tbsp. salted butter

+ 1 yellow onion, finely diced

+ 2 large carrots, finely diced (4 small)

+ 1 ½ tsp. salt

+ 2 tsp. freshly cracked black pepper

+ 2 tsp. dried basil

+ 1 tsp. crushed red pepper

+ 56 oz. San Marzano Tomatoes (I use Cento)

+ 1 tsp. lemon zest

+ 4 cups vegetable stock

+ 2 cups heavy whipping cream

+ 1 large handful freshly grated parmesan

+ 2 handfuls fresh basil

Steps:

1. Heat oil and butter on medium high heat. Add in onions and carrots. Sauté until onions are translucent (approximately 10 minutes).

2. Add salt, pepper, red pepper flakes, dried basil, and lemon zest. Add the tomatoes and vegetable stock. Stir to combine and let simmer for approximately 30 minutes.

3. Add heavy whipping and let simmer for approximately 5 minutes. (You can also add a handful of finely grated parm to make it extra delicious).

4. Remove from heat, add fresh basil and blend until smooth.

5. Garnsih with additional freshly grated parmesan, fresh basil, and serve with crispy crostini!
