Spanish Rice (aka Mexican Rice)

I’m so excited to be sharing this Spanish Rice (also know as Mexican rice)! This is my mom’s version of Spanish/Mexican rice that I grew up enjoying as a side dish to many meals. I’ve used it in a few recent videos and have gotten some requests to share how to make it. It’s quick, flavorful, delicious, and can elevate any meal. Everyone has a different way of making this, just sharing ours – hope you try it and enjoy!

What You'll Need:

+ 1 cup Long Grain Rice

+ 2 1/4 cup Unsalted Broth

+ 1 cube Chicken Bouillon (dissolved in broth)

+ 4 oz. Tomato Sauce

+ 1/4 Onion, chopped

+ 3 cloves Garlic, minced

+ 1/2 tsp Salt

+ Pinch Cumin

+ 2-3 tbsp. Olive Oil

+ Cilantro for garnish

Steps:

1. In deep skillet heat oil and brown rice while continually stirring over medium heat.

2. Once browned, add diced onion & minced garlic, lower heat, and stir until all is incorporated.

3. In separate pot bring broth to a boil, dissolve bouillon cube, and add to rice.

4. Add salt, tomato sauce, cumin (any canned or fresh chili is optional) and stir. Bring to a boil & cover.

5. Reduce heat to a low simmer & cook for approximately 20-25 minutes. Turn heat off but leave covered on stovetop for an additional 10 minutes.

6. Garnish with cilantro and enjoy!
