What You'll Need:

+ 1 lb. Shrimp, cleaned and deveined

+ 4-5 tbsp. Butter

+ Extra virgin Olive Oil (I used lemon olive oil)

+ 5 Garlic Cloves, minced

+ 1/2 Shallot, minced

+ 1 tsp. Crushed Red Pepper

+ 1/4 tsp. Paprika

+ 3/4 cup White Wine

+ Zest of 1 Lemon

+ Juice of 2 Lemons

+ Salt & Pepper to taste

+ Parsley, chopped

+ Finely grated Parmesan to top (optional – you could also incorporate the parmesan into the sauce before adding in the pasta if you prefer a more creamy consistency. Add pasta water if needed to reach desired consistency)

Steps:

1. Cook pasta al dente.

2. Season shrimp with salt, pepper, paprika, and crushed red pepper.

3. Heat oil in pan over medium, add shrimp, and sauté until pink/opaque (and C-shaped). Remove shrimp from pan and set aside.

4. In the same pan, add butter, shallot, crushed red pepper, white wine, lemon zest, and lemon juice. Sauté for 2-3 minutes until shallots are translucent and mixture is fragrant.

5. Transfer pasta into the pan. Add parsley and shrimp, then combine.

6. Serve pasta with topped parmesan and parsley. Enjoy!
