30 Minute Comforting Pastina is always a winner! Aside from Pastina going viral years ago it’s also one of my favorite childhood recipes that I’ve tweaked over the years. Everyone has a different way of doing it - you can keep it simple without adding any veggies, adjust the broth ratio based on preference, and omit the lemon but this is the way I personally love it most 😍🍋❤️ It’s simple, packed with flavor, and just feels like a hug in a bowl. Hope you love it!

Ingredients:
2 tbsp. Extra virgin olive oil
1 tbsp. Unsalted butter
½ cup carrots, finely diced
½ cup celery, finely diced
6 cups chicken broth (homemade or store bought)
Parmesan rind (optional)
1 ¼ cup pastina (I love @barillaus )
¼ cup freshly grated parmigiano reggiano plus lots more to top
Juice of 1 small lemon to top (about 2 tbsp.) @wonderfulseedlesslemons 🫶🏼
Salt and pepper to taste
Crushed red pepper to taste (optional)

Method:
1. Heat a medium sized pot or dutch oven over medium-high heat. Add olive oil, carrot, celery , salt and pepper and cook for 3-4 minutes or until slightly softened.
2. Add chicken stock and parmesan rind and bring to a low boil, and let simmer for 5-8 minutes or until veggies are tender.
3. Add pastina and cook according to package instructions, stirring occasionally. Taste and adjust for seasoning.
4. Once the pastina is cooked, remove from heat and add butter and parmesan then stir to combine. Serve and top with a squeeze of lemon juice, drizzle of olive oil and additional parmesan. Enjoy!

These Cheesy Hot Italian Sliders are a MUST for game day! 🏈😍 They’re so easy to make and done in just 20 minutes. Enjoy!

Ingredients:
1 pack of @kingshawaiian Original Hawaiian Sweet Rolls
12 slices provolone cheese
6 slices mozzarella cheese
6 slices black forest salami
12 slices genoa salami
6 slices calabrese salami
1 tbsp. Freshly grated parmesan
2 tbsp. Calabrian chili paste
1 tbsp. Butter, softened

Herb Garlic Butter:
4 tbsp. Butter, melted
2 tbsp. Italian flat leaf parsley, chopped
1 tsp. Garlic powder
1 tsp. Italian seasoning

Method:
1. Preheat the oven to 375 degrees and lightly grease the bottom of a baking dish.
2. Horizontally slice the Hawaiian Sweet Rolls in half.
3. Place the bottom half of the rolls into the greased baking dish and begin layering with half of the provolone (6 slices), calabrian chili paste, black forest salami, half of the Genoa salami (6 slices), mozzarella, calabrese salami, freshly grated parmesan, the remaining Genoa salami and the remaining provolone.
4. Lightly butter the inside of the top rolls and place them onto the bottom.
5. In a small mixing bowl, add melted butter, chopped parsley, garlic powder and Italian seasoning, then mix until combined.
6. Brush the mixture overtop and bake for approximately 15 minutes or until golden brown and cheese is melted.
7. Slice into 12 pieces, pull apart, and enjoy!

Welcome back to my series “WTF To Make For Dinner” 🙊🤗🍷 Follow along for quick, easy, and delicious recipes. Tonight we’re making my “Marry Me” Pasta that’s inspired by the famous “Marry Me” Chicken 🧡

Ingredients:
4 ounces diced pancetta
14 ounces rigatoni (I love @barillaus Al Bronzo Pasta ❤️)
3 cloves garlic, finely minced
2 tablespoons tomato paste
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon crushed red pepper flakes (adjust based on heat preference)
1/3 cup strained and chopped sundried tomatoes
1 1/4 cup heavy cream, room temperature
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 cup freshly grated Parmigiano-Reggiano plus more for serving
2 tablespoons unsalted butter (optional)
Fresh basil for serving
(1/4 cup pasta water or as needed)

Paired with @ilcellese_winery_villa

Method:
1. Bring a large pot of heavily salted water to a boil and cook your pasta al dente according to package instructions. Be sure to reserve 1/2 cup of pasta cooking water.
2. In a medium pan over medium heat, cook the pancetta until it becomes crispy and golden brown, 6-8 minutes. Using a slotted spoon, strain the pancetta and place onto a paper towel lined plate and set aside.
3. In the same pan with the pancetta fat, add the garlic and cook, stirring constantly until fragrant, 1-2 minutes. Add the tomato paste, dried oregano, dried basil, and red pepper flakes. Cook until the color of the tomato paste has deepened, 3-5 minutes.
4. Reduce the heat to low and add the sun dried tomatoes and heavy cream. Stir to combine and cook until the sauce has thickened enough to coat the back of a spoon, 3 to 5 minutes. Season with salt and pepper, stir to combine and turn off the heat.
5. Transfer the pasta directly into the pan along with the freshly grated cheese, butter (optional), and pasta water (as needed) while stirring quickly to combine. Once the pasta is evenly coated, transfer to a plate and serve with additional freshly grated parm, torn fresh basil and freshly cracked black pepper. Enjoy!

Tonight we’re making my Cauliflower Gnocchi with Italian Sausage and Pesto Cream Sauce 💚 You can use my homemade pesto recipe for this (on my site!), but as Ina says, store-bought will do just fine for a quick weeknight meal.

Ingredients:
1 pack Trader Joe’s frozen cauliflower gnocchi
1 pound sweet italian sausage, casings removed
1 ¼ cup heavy cream
⅓ cup basil pesto (homemade or store-bought)
1 tbsp. olive oil
1 tbsp. butter
½ frozen peas (optional)
Salt and pepper to taste

Method:
1. In a large non-stick pan, heat olive oil over medium high heat. Add sausage into the pan and use a spoon or spatula to break up the sausage into smaller pieces. Cook for 8-10 mins, or until browned.
2. Reduce the heat to low. Using a slotted spoon, remove sausage from the pan, keeping as much of the grease in the pan as possible. Set sausage aside.
3. Add in the butter, once melted follow the pan sear cooking instructions on the gnocchi bag. Once gnocchi is cooked, add the sausage back in. Carefully pour in the heavy cream, bring to a simmer and cook for about 3 mins. Add peas at this step if you are using them. Turn off the heat and add in the basil pesto. Season with a pinch of salt and black pepper.
4. Serve with a generous amount of freshly grated parm on top and enjoy!
