Macadamia Coconut Crusted Mahi Mahi fish and seafood recipe

Kauai has always been one of my favorite places. The first time I visited at 5 years old I threw a tantrum when I realized we had to go back home! The last time Andrew and were there was in 2016 and along with the amazing experiences came the FOOD! We ate at Keoki’s Paradise and I had the Macadamia Crusted Mahi Mahi and became obsessed. This is my take on it – Macadamia Coconut Crusted Mahi Mahi – and what we make at home for a little slice of paradise until we’re able to make it back! It’s easy to make and so delicious. We love that it’s crusted, flaky, and full of flavorful. Hope you enjoy!

What You'll Need:

+ 1 cup Unsweetened Coconut Flakes

+ 1 1/4 cup toasted Macadamia Nuts, crushed/finely ground

+ 1/2 cup Parmesan

+ 1 cup Flour

+ 1/2 cup Coconut Milk

+ 2 Eggs

Sauce

+ 6-8 tbsp. Butter

+ 1/2 Shallot, finely diced

+ 1/2 cup White Wine

+ Juice of 1 Lemon

+ 1/4 cup Heavy Cream

+ 1-2 tbsp. Capers

Steps:

1. In a bowl, combine panko, unsweetened coconut, macadamia nuts and parmesan.

2. In another bowl combine eggs and coconut milk, whisk.

3. Season fish with salt and pepper.

4. Bread the fillets – first coat in flour, then coat coconut milk mixture, then coat in breadcrumb mixture – make sure to press on well and thoroughly coat.

5. Drizzle olive oil (or avocado oil) onto a cast iron skillet and heat to medium.

7. Cook fillets on each side for approximately 4-5 minutes depending on thickness. NOTE* if you prefer yours more well done, only cook for 3-4 minutes on each side then place into 400 degree oven for approx. 5 minutes.

Sauce

1. Place shallots, wine, lemon juice, and heavy cream into a saucepan over medium-high heat. Simmer and reduce until less than half of mixture remains.

2. Reduce heat to low and begin adding 1-2 pieces of butter at a time.

3. Whisk consistently until the sauce has emulsified (5 minutes).

4. Add capers and serve beside fish.
