Welcome back to my new series “WTF To Make For Dinner” 🙊🤗🍷 Follow along for quick, easy, and delicious recipes to answer the question that’s always on our mind. We’re making my Garlic Butter Steaks with a Mushroom Wine Sauce with roasted potatoes for Episode 5! Here’s the recipe, hope you love it ❤️

Ingredients:
2 filets
Approximately 1-2 tbsp. avocado oil
Salt & fresh cracked pepper to taste
3 garlic cloves, smashed
2 tbsp. grass fed butter
3 sprigs rosemary

Sauce:
2 cups baby bella mushrooms, sliced
2 tbsp. grass fed butter
1 shallot, minced
1 ¼ cup beef broth
Generous splash of red wine
Salt & fresh cracked pepper to taste
1 tbsp. cornstarch mixed with 2 tbsp. cold water (use as needed to thicken based on desired consistency)

Method:
1. Heat a stainless clad pan over medium-high heat before adding any oil.
2. Make sure your steaks are seasoned well and completely dry! Otherwise, you won’t get a good sear.
3. Add oil to thinly coat the pan and allow it to come up to heat. I like using avocado oil for this because of it’s high smoke point and neutral flavor.
4. Add steaks and sear for approx. 4 min on each side. It should release easily with no sticking.
5. Lower the heat and add butter, smashed garlic cloves, and rosemary sprigs. Carefully tilt your pan so that you can baste the steaks with the flavored butter.
6. Most importantly, after removing from the heat, let rest for minimum 10 min before serving. Always slice against the grain for the most tender bite.
If using a thermometer: Medium Rare - 135 degrees, Medium - 145 degrees

For the sauce:
1. In the same pan over medium heat, add shallots and mushrooms. Sauté for 1-2 min.
2. Add butter, red wine and beef stock. Stir to combine and let simmer for 10 min.
3. Then, add corn starch slurry, salt & lots of pepper and stir until thickened. Serve overtop steak and enjoy!

Ingredients:

Top with soda
Lemon slice & mint for garnish

Method:
1. Combine Courvoisier VSOP, lemon liqueur, orange juice, and lemon juice in a cocktail shaker & shake until frosty.
2. Add ice to a glass & strain mixture overtop.
4. Top with club soda.
5. Garnish with a slice of lemon and a sprig of mint.

If you love pasta salad and pesto, then you need to try my Spring Pesto Pasta Salad with Crispy Prosciutto 😍🥂 Hope you love it!

Ingredients:
1 lb. pasta (I love and recommend @barillaus Al Bronzo
❤️)
2 cups cherry tomatoes, halved
8 oz. mozzarella pearls
1 ½ cups green peas, thawed
4 oz. prosciutto (I love @veroni_usa )
3 cups fresh basil
3/4 cup parmigiano reggiano
2-3 cloves garlic cloves
3 tbsp. pine nuts
Juice of 1 lemon (about 2 tbsp. - I love @wonderfulseedlesslemons )
Salt to taste
Freshly cracked black pepper to taste
1/2 cup Extra Virgin Olive Oil as needed

1. Preheat the oven to 375. Place prosciutto on a baking rack or lined baking sheet. Bake for 15 minutes or until crispy and golden. Set aside to cool then roughly chop and set aside.
2. In a large pot of heavily salted boiling water, cook the pasta until Al dente. Strain, rinse with cold water, and drizzle with olive oil to prevent sticking. Set aside.
3. In a food processor or blender, add basil, garlic, and pine nuts. Pulse until well combined. Then add parmesan, salt, pepper, and lemon juice. Pulse and begin to drizzle in olive oil until it reaches your desired consistency.
3. In a large mixing bowl, combine pasta, tomatoes, peas, and mozzarella. Pour the pesto overtop and mix together until thoroughly coated and combined. Taste and adjust for seasoning.

TIPS:
When pulsing the basil, pine nuts, and garlic together, you can add a couple ice cubes to help the pesto retain its vibrant color.
Keep in mind that you want this to be slightly thinner than a pesto as it’s dressing the pasta salad.
You can air fry the prosciutto at 350 degrees for about 8 minutes if that works better for you.

Today we’re making my favorite Sicilian Inspired One Pan Baked Cod that I learned from the wonderful owner of @osteriasantadomenicataormina while visiting Taormina. If you’re ever there, you’ve got to check it out for dinner and a cooking class! ❤️
Ingredients:
1.5-2 lbs. cod (4 filets - I get mine from @wholefoods ❤️)
1 tbsp. @dalkinandco Gaby’s Everyday Seasoning (@whatsgabycookin it’s SO good! 😍)
1 pint grape tomatoes, halved
1/4 red onion, thinly sliced
4 cloves garlic, minced
1/2 cup kalamata olives, drained and halved
1 tbsp. capers, drained
2 tbsp. olive oil
1/4 cup white wine
1 tsp. crushed red pepper (adjust based on heat preference)
Salt and freshly cracked black pepper to taste
Fresh basil and mint, chiffonade
Juice of 1 lemon plus lemon wedges for garnish (I love @wonderfulseedlesslemons 🍋)

1. Preheat oven to 400 degrees.
2. In a baking dish, add tomatoes, onion, garlic, olives, capers, olive oil, white wine, salt, pepper, and red pepper. Bake for 15 minuted or until tomatoes are tender and releasing their juices.
3. Meanwhile, pat cod filets dry and generously season both sides. Set aside.
4. Remove baking dish from oven and add the fish in. Return to oven and bake for 10-12 minutes until the fish is cooked through (depending on thickness).
5. Serve, top with a squeeze of fresh lemon juice, and garnish with fresh mint and basil. Enjoy!

For the asparagus, I tossed with olive oil, salt, and pepper and baked at the same time as the cod - 400 degrees for 10 minutes!
