Amalfi Coast Spaghetti al Limoné valentine's day recipe

Last summer in Italy, Andrew and I had the most delicious limoné pasta in the Amalfi Coast and this is my version that I call Amalfi Coast Spaghetti al Limoné. He surprised me with a huge box of special Amalfi lemons so I knew it was time to recreate it at home. This dish only requires a few ingredients and is done cooking in under 15 minutes. It took us straight back to that restaurant in Italy! It also just goes to show that sometimes the most simple dishes are the most delicious. I hope you have as much fun trying it at home as we did. It’s a winner and I’m so excited to share it with you!

What You'll Need:

+ 1 pack spaghetti (16 oz.)

+ 6 tbsp. unsalted butter

+ 1 tbsp. EVOO

+ 2 cloves garlic, smashed

+ 1 lemon, zested

+ 2 lemons, juiced

+ 1 ½ cups freshly grated Parmigiano Reggiano (plus more for garnish)

+ Handful fresh mint, torn and divided

+ 1 cup pasta water (more/less depending on consistency of sauce)

Steps:

1. In a large pan over low heat, add your extra virgin olive oil, butter, and smashed garlic cloves.

2. Meanwhile, boil spaghetti and reserve a minimum 1 cup pasta water.

3. To the pan, add lemon zest and cook for 1 minute.

4. Add lemon juice, half of the mint, and halved lemons. Remove garlic cloves.

5. Once pasta is al dente add it directly into the pan along with the remaining mint, Parmigiano Reggiano, and pasta water (adding little by little). Turn heat off and stir vigorously to meld flavors.

6. Serve and garnish with a mountain of Parmigiano Reggiano, lemon zest, and fresh mint. Hope you love it and enjoy!
