Pesto Pizza Game Day Sliders

With the big game right around the corner, I’m taking Slider Sunday very seriously with these Pesto Pizza Game Day Sliders. I’ve loved Hawaiian sweet rolls for as long as I can remember and this has quickly become my favorite way to enjoy them! They’re soft, fluffy, and the perfect balance of salty and sweet for this recipe. It doesn’t hurt that they’re done in no time and so simple to make. They’re sure to be a hit with friends and family. Hope you love them as much as we do!

What You'll Need:

+ 1 pack of Hawaiian sweet rolls

+ 2 cups low-moisture mozzarella, freshly grated

+ 6 slices provolone cheese

+ 12 slices roma tomatoes

+ 12 slices sopressata

+ 3 tbsp. homemade Pesto plus more for dipping (recipe below)

+ Garlic Herb Butter (recipe below)

+ 1 tbsp. parmesan, freshly grated (for topping)

For the Pesto:
+ 2-3 cups Fresh Basil

+ 1 cup freshly grated parmigiano reggiano

+ 3 Cloves Garlic, smashed

+ 2-3 tbsp. Pine Nuts

+ Extra Virgin Olive Oil

+ Salt & Pepper to taste

+ Crushed red pepper to taste

For the Garlic Herb Butter:
+ 2 tbsp. Butter, melted

+ 1 tbsp. Italian flat leaf parsley, chopped

+ ½ tsp. Garlic powder

+ ½ tsp. Italian seasoning

Steps:

1. Preheat the oven to 375 degrees and lightly grease the bottom of a baking dish.

2. Horizontally slice the King’s Hawaiian Original Hawaiian Sweet Rolls in half.

3. Place the bottom half of the rolls into the greased baking dish and begin layering with the provolone (6 slices), pesto, soppressata, half of the mozzarella (1 cup), tomato slices, and the remaining mozzarella (1 cup).

For the Pesto:
1. In a food processor or blender, combine basil, garlic, and pine nuts. Pulse until fine.

2. Add in half of the parmesan, salt, pepper, and red crushed pepper. Pulse while streaming in olive oil to reach your desired consistency.

3. Add the remaining parmesan and fold into the sauce (this creates a thicker texture) and set aside.

For the Garlic Herb Butter:
1. In a small mixing bowl, add all of the ingredients and stir to combine. Set aside.
