This Soba Noodle Salad with Sesame Crusted Ahi is

This Soba Noodle Salad with Sesame Crusted Ahi is the perfect dish to make this Brat Summer 💚😉 So delicious!

Serves: 6

For the Tuna:
10-16oz. sushi grade ahi tuna, thawed and room temperature
1/4 cup soy sauce
1/4 cup sesame seeds
1/4 cup avocado oil (or neutral oil of choice for searing)

For the Salad:
1 9.5 ounce pack soba noodles
1 red bell pepper, thinly sliced
2 carrots, sliced into ribbons using a vegetable peeler (or thinly sliced)
1 cup edamame
2 limes, sliced for serving
1 bunch scallion greens, sliced for garnish

For the Dressing:
6 tablespoons toasted sesame oil
6 tablespoons soy sauce
3 tablespoons mirin
1 tablespoon honey
2 tablespoons rice wine vinegar
1 bunch scallion whites, minced
1 tablespoon freshly grated ginger
1 clove garlic, freshly grated
*For the dressing, combine all ingredients and whisk together.

1. Using a paper towel, pat the tuna completely dry. Place the ahi tuna steaks into a shallow dish or plate and pour the soy sauce overtop, making sure they are fully coated. Then, generously coat all sides with sesame seeds, being sure to press down so they are fully covered.
2. Heat avocado oil in a cast iron skillet over medium-high heat. Once hot, place steaks in the skillet and sear for approximately 45 seconds or until golden brown on the outside. Flip and sear for an additional 60 seconds. Carefully sear the edges until golden then remove and let rest. NOTE: Sear to your desired doneness - if you prefer more well done, increase the amount of time on each side.
3. In a large pot of boiling water, cook the soba noodles 30 seconds less than directed on the package. Immediately drain the noodles and run under cold water until cooled.
4. In a large mixing bowl. combine the soba noodles, bell pepper, carrot, and edamame. Pour the dressing (recipe above) overtop and toss to combine. Garnish with scallions and serve with a squeeze of fresh lime juice.

The most simple and delicious dinner idea! You’ve gotta try my 20 Minute Garlic Cherry Tomato Pasta 🍅🍝🍷

Ingredients:
12 oz. Bronze Cut Spaghetti (I LOVE @barillaus Al Bronzo)
3 tbsp. EVOO
4-5 cups cherry tomatoes
3-4 cloves garlic, thinly sliced
1-2 tsp. Crushed calabrian chili paste (or crushed red pepper)
1 large handful fresh basil, torn
½ cup pasta water plus more to taste
1-2 tbsp. unsalted butter
LOTS of freshly & finely grated parmigiano reggiano
Salt and pepper to taste

In heavily salted water, cook pasta according to package directions (if directions do not mention al dente then cook for 2 minutes less than instructed).
In a large skillet over medium heat, add olive oil and garlic. Saute for 2-3 minutes or until fragrant being careful not to burn the garlic.
Increase the heat to medium-high and add tomatoes to the skillet. Cook for approximately 5-7 minutes or until tomatoes begin to soften and release juices.
Using a potato masher or the bottom of a flat wooden spoon, gently crush the tomatoes to create a uniform sauce.
Add crushed calabrian chili (or red pepper), ½ cup pasta water, and butter. Stir to combine and let simmer for 5-7 minutes.
Turn the heat off, add pasta directly into the sauce and stir quickly to combine. Add additional pasta water if desired and fresh basil leaves. Mix until thoroughly combined and serve with a mountain of parmigiano reggiano. Enjoy!

Tip: After cutting tomatoes in half I like to salt them as this releases juices more quickly.

When in doubt, make Bruschetta! Simple, crunchy, and so delicious 🥖🍅🧄

Ingredients:
1 loaf ciabatta, sliced
4 large vine ripe tomatoes, diced
Handful basil leaves (about 10), chopped
Extra Virgin Olive Oil
Salt & pepper to taste
2 cloves garlic, peeled
1/2 tsp dried oregano
Burrata
Balsamic vinegar/glaze to top (optional)

1. In a mixing bowl, combine tomatoes, basil, salt, pepper, and oregano, then set aside.
2. Drizzle bread with EVOO and toast on grill pan until slightly charred.
3. Rub garlic clove on bread and top with fresh Burrata and mixture. Garnish with flaky sea salt and enjoy!
(we also love drizzling balsamic overtop)
Pairing with Viticcio Monile Toscana 🍷

This Soba Noodle Salad with Sesame Crusted Ahi is the perfect dish to make this Brat Summer 💚😉 So delicious!

Serves: 6

For the Tuna:
