3 Cheese Potatoes Au Gratin

You guys, can you believe Thanksgiving is just days away!? We’re in full-on prep mode over here and have been waiting to share this ooey, gooey, and delicious 3 Cheese Potatoes Au Gratin recipe with you! Thankfully, one of my most-used kitchen items, the food processor, has been helping me majorly cut down on recipe prep. It’s a staple in my kitchen year round and becomes even more helpful during the holiday season.

What You'll Need:

+ 3 lbs. russet potatoes (approximately 4 large potatoes)

+ 3 cloves garlic, minced

+ 1 cup heavy cream

+ 1 cup half and half

+ 2 tbsp. unsalted butter

+ 1 ½ tsp. salt

+ 1 tsp. pepper

+ Pinch of freshly grated nutmeg

+ 3 sprigs fresh thyme

+ 2 cups gruyere (reserve ½ cup for topping), freshly grated

+ ¾ cups white cheddar, freshly grated

+ ¼ cup parmigiano reggiano, freshly grated

Steps:

1. Preheat the oven to 375 degrees. Grease your baking dish.

2. Rinse and peel potatoes.

3. Use the food processor to shred your cheese and slice your potatoes.

4. In a large mixing bowl, combine cream, half and half, melted butter, seasonings, thyme, and potatoes. Mix until potatoes are thoroughly coated.

5. Pour mixture into baking dish and cover with foil. Bake for 1 hour or until potatoes are fork tender.

6. Remove foil, top with reserved ½ cup gruyere, and bake for an additional 30 minutes or until golden brown and bubbling. Let rest for at least 5 minutes before serving. Enjoy!
