Apricot Galette

This Apricot Galette may be the best thing I’ve ever baked and it’s so easy! I love how perfectly flakey this is and it strikes the right balance of sweet and tart. It’s also great to have with your morning coffee! Hope you love it as much as we do.

How to Make an Apricot Galette

Ingredients – For The Galette

  • 1 1/2 cups All-purpose flour
  • 1/2 teaspoon Salt
  • 1 stick unsalted butter, cubed
  • 2 teaspoons granulated sugar
  • 5 tablespoons ice cold water
  • 1 egg white (for base of galette)
  • 1 egg (for egg wash)
  • Turbinado sugar (for sprinkling on dough before baking)

Ingredients – For The Filling

  • 4 cups apricots, sliced
  • 1/2 cup granulated sugar
  • 4 tablespoons corn starch (for very ripe fruit – adjust as needed)
  • 2 tablespoons orange juice
  • 1 tablespoon orange zest
  • 1/4 teaspoon salt

Step-By-Step Recipe Method

  1. In a food processor add flour, sugar and salt. Add cubed butter and pulse until large crumbles form.
  2. Slowly stream in liquid until the dough comes together and a ball forms.
  3. Remove from the food processor and mold into a uniform ball. Wrap in saran wrap and refrigerate for 45 minutes (or more).
  4. While the dough is chilling, combine apricots, sugar, corn starch, salt, orange juice, and orange zest into a large mixing bowl and combine.
  5. Set aside, preheat your oven to 400 degrees, and remove dough from the refrigerator. Roll out dough on a lightly floured surface to a 12-14 inch round.
  6. Carefully transfer to a lined baking sheet and brush the center of the circle (leaving at least a 2-3 inch border) with egg white.
  7. Place fruit mixture onto the center and spread evenly leaving at least a 2-3 inch border. Fold dough inwards and overlap – the best part is it doesn’t have to be perfect!
  8. Bake for approximately 40-45 minutes or until golden brown. Note that every oven is different so keep an eye on it!
  9. Serve with vanilla ice cream and enjoy!
