Looking for a simple and unique salad that’s perfect for spring? This Brussel Sprout Salad recipe has you covered! It’s my version of one of my favorite salads from a restaurant called La Grande Orange in Pasadena. I look forward to ordering it every time we go – it’s unique, light and PACKED with flavor 😍 Enjoy!

What You'll Need:

+ Approximately 1 lb. Brussels Sprouts

+ Handful of Dried Cherries and/or Cranberries

+ Handful of Marcona Almonds or Slivered Almonds

+ Bacon (optional – highly recommends adding some if you have it on hand)

+ Shaved Manchego (parmesan works great also)

Dressing

+ 1/2 cup Olive Oil

+ Juice of 1/2-1 Lemon Depending on Preference

+ Zest of 1 Lemon

+ 1 Clove Garlic Finely Minced/Grated

+ 2 tbsp. champagne vinegar

+ 2 1/2 tbsp. honey

+ 1 tsp. whole grain mustard

+ Salt & freshly cracked pepper to taste

Steps:

1. Tear off leaves of Brussel Sprouts and blanch them until softened and vibrant green.

2. Place in ice water, remove and dry.

3. Whisk vinaigrette together then combine all ingredients and toss.

4. Top with shaved cheese and enjoy!
