Classic Tabbouleh

Andrew grew up eating tabbouleh and I’ve always LOVED this delicious dish! It only requires a handful of ingredients and is so flavorful. I love that this Classic Tabbouleh is simple, healthy, and great to have on hand when you need a quick snack or side. Fresh, finely diced parsley is the main ingredient here and it’s packed with antioxidants. Just one more reason you’ve got to give it a try! Like with any recipe, there are many ways to adjust based on your preference. We personally like LOTS of lemon, hope you enjoy!

What You'll Need:

+ 2 cups Curly Parsley, finely chopped

+ 1/4 cup Mint, finely chopped

+ 1/4 cup Fine Bulgur (#1 – do not use the larger size!)

+ 3 Scallions, chopped

+ 1-2 firm Tomatoes, seeded and finely diced

+ 1-2 Lemons, juiced (depending on preference – we like it very lemony)

+ 1/3 cup Extra Virgin Olive Oil

+ Salt and Pepper to taste

+ Drinking: DAOU Sauvignon Blanc

Steps:

1. Combine olive oil, lemon juice, bulgur, salt and pepper, then whisk. Set aside.

2. Chop parsley, scallions, tomatoes, and mint.

3. Combine all ingredients and gently toss. Top with additional lemon if desired and enjoy!
