Copycat Sweetgreen Harvest Salad

It’s safe to say I’m OBSESSED with this salad. This is my order at Sweetgreen and it’s so easy to make at home! You’ve got to try this harvest salad for a healthy lunch, dinner, or even to make for your next holiday gathering! Enjoy!

What You'll Need:

+ 1 bunch kale, finely chopped

+ 1 cup cooked white quinoa

+ 1 sweet potato, thinly sliced and roasted at 400 for approximately 8 minutes

+ 1 honeycrisp apple, diced

+ ½ cup almonds, roughly chopped

+ 1 large carrot, shredded

+ Goat cheese (minimal amount to top)

Dressing:

+ ¼ cup EVOO

+ 1 shallot, diced

+ 2 tbsp. balsamic vinegar

+ 2 tbsp. honey (or agave or maple syrup)

+ 1 tsp. whole grain mustard

+ Salt & pepper

*blend for ultimate creaminess*
