Creamy Cauliflower Mash

this Creamy Cauliflower Mash is the perfect quick and easy side dish for any dinner

I made this Creamy Cauliflower Mash to serve as a base for my Red Wine Braised Short Ribs during a recent dinner party and it was SO good! It also tastes great on it’s own as a side dish to any meal. Hope you try it and love it as much as we do!

What You'll Need:

+ 1 large head cauliflower, cleaned and broken into even sized florets

+ 2 cloves garlic

+ Salt to taste

+ Freshly cracked black pepper to taste

+ Freshly grated nutmeg, to taste

+ 1 pint heavy cream

+ 2 tbsp. Unsalted butter

Steps:

1. In a medium saucepan, add the cauliflower, garlic cloves, salt, pepper, nutmeg and just enough cream to cover the cauliflower (you do not need to use the whole pint).

2. Bring to a simmer over medium heat and cook until the cauliflower is fork tender.

3. Transfer the cauliflower (not the liquid) into a heat proof blender or food processor and begin to blend.

4. Slowly add a little bit of the remaining heated heavy cream mixture as needed until it reaches your desired consistency. Note that you will not use all of the cream.
