This Crunchy Kale Apricot Salad tastes better than candy and is MUCH healthier for you! Aside from Nana’s Crunchy Lemon Parm Salad, this is my husband Andrew’s favorite! He’s not the biggest salad lover but he asks for this all the time. It’s easy, delicious, and only requires a few simple ingredients. I love the combination of sweet dates, crunchy almonds, and salty parmesan. I used apricots here but peaches also work great in this salad. If you’re looking for a flavorful and healthy recipe, you HAVE to try this Crunchy Kale Apricot Salad!

What You'll Need:

+ 1 bunch kale, very thinly sliced (I used about 15 stalks)
+ 5-6 apricots
+ 3/4 cup dates, pitted and diced
+ 3/4 cup slivered almonds
+ 3/4 cup pomegranate seeds
+ Parmesan, thinly sliced to top (be generous!)

Dressing:
+ 1/2 cup extra virgin olive oil
+ 2 tbsp. balsamic vinegar
+ 1 tbsp. honey
+ Salt & pepper to taste (season generously and taste throughout)

Tip* Make sure to massage your kale with EVOO after slicing. As always, use a high quality parmigiano reggiano – it makes all the difference in flavor.
