Easy Creamy Tomato Basil Tortellini

My Auntie Bug’s Easy Creamy Tomato Basil Tortellini is one of the creamiest and most delicious pastas ever (I’m willing to put my money on it)! If you haven’t tried it yet, don’t waste any more time! Andrew and I were floored by how delicious and easy this was the first time we tried it. We’ve been making it ever since and it has now become a fan favorite of those who’ve tried it as well! It’s a 15-minute weeknight staple so whenever you’re short on time and want a hearty and comforting meal, you have to try this! It’s creamy, cheesy and packed with flavor. Hope you love it – cheers!

How to Make My Easy Creamy Tomato Basil Tortellini

Ingredients

  • Store-bought tortellini or ravioli (make it easy!)
  • 1 head of broccoli
  • 4 tablespoons salted butter
  • 1/3 cup sweet onion, finely diced
  • 1 clove garlic finely diced
  • 1 teaspoon dried basil
  • 3 ounces tomato paste
  • 1 tablespoon Calabrian chili paste (optional – if you want it spicy)
  • 1 cup heavy cream
  • 3/4 cup Parmigiano-Reggiano (more to thicken if needed and more for garnish)
  • 1/4 cup pasta water
  • Salt & pepper to taste
  • Fresh basil, for garnish

Step-By-Step Recipe Method

  1. Bring a large pot of heavily salted water to boil while you start the sauce (directions below). Once boiling, add broccoli and cook for 3-4 minutes, remove and set aside. Then, add tortellini and cook according to package directions (be careful not to overcook).
  2. In a large skillet melt salted butter, add 1/3 cup diced sweet onions and cook over low heat 3-4 mins. Add garlic and cook on low another few minutes. Add 1 teaspoon dried basil, 3 oz. tomato paste, and Calabrian chili paste (if using), cook a few more minutes until the tomato paste darkens a bit.
  3. Add 1 cup heavy cream and stir over low heat until heated through then add 3/4 cup grated parmesan cheese (more for thicker sauce). Stir and continue to heat, then add 1/4 cup of the hot pasta water, stir and cook 3-4 more mins. Add salt to taste. If the sauce is too thin add more parmesan, if too thick add a bit more pasta water. Add tortellini, stir to combine, and serve. Garnish with more parmesan, fresh basil and enjoy!
