How To Make My Go-To Greek Salad
Here’s a video of when I made my Go-To Greek Salad during a dinner party! For another delicious dish, check out my Zest Mediterranean Couscous Salad recipe.
Ingredients For The Salad
- 5 mini cucumbers, halved and sliced
- 4 heirloom tomatoes, diced
- 1 large green bell pepper, chopped
- ½ medium red onion, thinly sliced
- 4 to 6 ounces french feta cheese, crumbled, for serving
- 1 large handful fresh mint, roughly torn for serving
- Flaky salt for serving
- Freshly ground black pepper for serving
Ingredients For The Vinaigrette
- 6 tablespoons red wine vinegar
- Juice of 1 lemon (about 2 to 3 tablespoons)
- 1 large clove garlic, minced or pressed
- 1 teaspoons salt
- ½ teaspoon freshly ground black pepper
- 1 teaspoon dried oregano
- ¼ teaspoon granulated sugar
- ½ cup extra virgin olive oil
Recipe Method
- In the base of a large mixing bowl, combine the red wine vinegar, lemon juice, garlic, salt, pepper, dried oregano, and granulated sugar.
- While whisking vigorously, slowly drizzle in the olive oil until the vinaigrette begins to thicken and emulsify (1 to 2 minutes). Note: You can also combine all of the ingredients into a mason jar and shake, storing in the fridge until it’s time to dress, toss and serve!
- Once you’re ready to serve, add the cucumbers, tomatoes, bell pepper, and red onion into the same large mixing bowl with the vinaigrette at the base.
- Using wooden spoons, gently toss the salad to combine until all ingredients are well coated. Transfer to a large serving dish and top with feta, fresh mint, flaky salt and pepper.
