Hearty Tuscan Kale Pasta Stew – If you couldn’t tell, I’m just a littttle bit excited that fall is here. It’s my favorite time of year, especially because of all the recipes. This is my version of a hearty pasta stew with Tuscan kale, creamy cannellini beans, a touch of lemon and LOTS of Parmigiano Reggiano! The best part is it packs a ton of flavor and requires very little time! Doesn’t get much easier than this for a quick weeknight meal. We absolutely loved it and know it will become one of our go-to’s this fall and winter. Enjoy!

What You'll Need:

Yields: 4 large servings

+ 3 Tbsp. extra virgin olive-oil

+ 1 Tbsp. butter

+ 1 jar Marinara Sauce

+ 3 cloves garlic, minced

+ 1 yellow onion, finely diced

+ 1 tsp. crushed red pepper (optional)

+ 1 15-oz. can cannellini beans

+ 10 oz. pasta/pastina (I prefer using smaller shapes in this)

+ Juice of ½ lemon

+ Parmigiano Reggiano rind (or 1 tsp Parmigiano Reggiano)

+ Additional finely grated Parmigiano Reggiano to thicken and for garnish

+ 6 oz. Tuscan kale, washed and chopped

+ 4 cups chicken or vegetable broth

+ 1 cup water

+ Splash of red wine

+ Flat leaf Italian parsley for garnish

+ Salt & pepper to taste

Steps:

1. Heat olive oil and butter in a large pot/Dutch oven over medium heat. Add onion and crushed red pepper, cook until translucent. Add garlic, salt, and pepper and sauté for 1-2 minutes.

2. Add marinara sauce, broth of choice, water, lemon juice, and Parmigiano Reggiano rind (or 1 tsp Parmigiano Reggiano).

3. Add pasta, cannellini beans, and a splash of wine. Bring to a boil and cook until the pasta is al dente, then reduce to a simmer. Taste and adjust for seasoning if needed.

4. Add a handful of finely grated Parmigiano Reggiano, if desired for thickness, and throw in the Tuscan kale. Stir to combine until the kale is wilted (approximately 5 minutes).

5. Serve and garnish with finely grated parmigiano, chopped parsley, and crushed red pepper.
