How To Make Nana’s Viral Crunchy Lemon Parmesan Salad

Ingredients

  • 3 to 4 romaine hearts
  • 1/4 cup extra virgin olive oil
  • 1 cup finely grated parmesan cheese (I HIGHLY recommend using the real deal Parmigiano Reggiano – it makes all the difference!)
  • Juice of 2 to 3 lemons, depending on preference
  • Salt & freshly cracked black pepper to taste

Optional: this is a great salad to add your favorite protein (chicken, shrimp, etc.) to, and you can also top with chives!

Recipe Method

  1. Chop the romaine and place into a mixing bowl. Drizzle the olive oil and toss to coat.
  2. Add parmesan and toss to coat thoroughly.
  3. Add the lemon juice and toss it one last time. Serve and garnish with salt, pepper, and any other toppings of your choice. Enjoy!

Tip

Wash the romaine hearts and wrap them in a towel. Then place the wrapped romaine into fridge for at least 20 minutes prior to chopping. This will help get them extra crispy and crunchy!
