Tortillitas Con Hugevo (Migas) mexican breakfast food recipe

I have always been amazed by my mom’s ability to throw together the most amazing dishes with whatever she has on hand. Anyone who knows her will attest to this. Not to mention that she does this in the blink of an eye. This traditional Tortillitas Con Huevo/Migas recipe has always been one of our favorites. It’s not only damn delicious but it’s also SO quick and easy! Trust me, if you haven’t tried these yet, they’re a MUST! They’re not only great for brunch but also for lunch and dinner. Enjoy!!

What You'll Need:

+ 8 Corn Tortillas

+ 4 Eggs

+ 1 Tomato, diced

+ 1/4 cup Tomato Sauce (optional – if we add this, we usually use Del Fuerte)

+ 1 tbsp. Onion, diced

+ 1 tbsp. Chile, diced (we used Green Pasilla but any works)

+ Olive oil (enough to cover surface of skillet)

+ Cotija cheese

+ Cilantro + Onion for garnish

+ Salsa of choice for Garnish (we used my mom’s)

+ Salt & Pepper to taste

Steps:

1. Heat up oil. Cut tortillas into small squares or triangles.

2. Add onion, chile, and tomato to skillet and sauté. Then add tortillas and allow them to fry a bit, frequently turning.

3. Add tomato sauce, salt, and pepper and combine.

4. Crack eggs directly into skillet and gently break up the yolks.

5. Gently flip to thoroughly cook the eggs. Sprinkle cotija cheese overtop and cover with lid. Turn the heat off and let it sit for a few minutes.

6. Serve and garnish with hot sauce of choice and diced cilantro + onion.
