Perfect Rosé Salad

Before we get into the easiest and most delicious spring salad recipe (the Perfect Rosé Salad), let’s talk about the wine, of course! The female-led winemakers Simi Winery and heroines of Reese’s Book Club collaborated to create The Editor’s Collection Rosé. It just launched and has quickly become one of my favorites for this time of year! The Editor’s Collection Rosé is a pale pink, medium-bodied, Provence-style wine with light fruit flavors of strawberry, citrus, and white peach. This rosé uses the best pinot noir grapes sourced from throughout California to create a wine that both brands hope will provide book club members, wine drinkers, and lovers of literature more ways to engage with stories and each other.

I created this salad and incorporated ingredients that specifically highlight the flavors of the rosé. It has lots of berries, the most delicious and simple sweet balsamic vinaigrette, and toasted pine nuts for some added flavor and crunch. Some other food pairings to enjoy with this wine include oysters, grilled fish or chicken, melon, brie, prosciutto and salami – cheers!

What You'll Need:

+ 1 pack Baby Spinach

+ 2 cups Strawberries, quartered

+ 1 cup Raspberries

+ 3 tablespoons Pine Nuts, toasted until golden

+ ½ Red Onion, finely sliced

+ Mozzarella

Dressing

+ ¼ cup EVOO

+ 2 tbsp. Balsamic Vinegar

+ 1 tbsp. Honey

+ Salt & Pepper to taste
