Are you looking for an easy and delicious dish to make for all your summer potlucks and bbq’s (think Memorial Day, 4th of July, and Labor day!)? This Ultimate Chicken Salad is IT! It’s so simple to make and doesn’t even require turning on the oven! All you have to do is mix together some shredded rotisserie chicken with the rest of the ingredients. I love using a combination of half mayo and half (full fat) Greek yogurt for the perfect balance of texture and tang. Serve alongside crackers for dipping or pile it high in a sandwich with some chips. Hope you try it and love it as much as we do. Cheers!

How To Make The Ultimate Chicken Salad

Ingredients (Serves 4-6)

  • 1 rotisserie chicken, finely chopped (about 3 ½ cups), juices reserved
  • 3 ribs celery, finely diced
  • 3 green onions (green and white parts), thinly sliced
  • 1 honeycrisp apple, diced (about 1 heaping cup)
  • ¾ cup red grapes, quartered
  • ½ red onion, diced
  • ½ cup dried cranberries
  • ½ cup chopped walnuts
  • 1 tablespoon chopped tarragon
  • 2 tablespoons chopped flat leaf parsley
  • ½ cup mayonnaise
  • ½ cup full fat Greek yogurt
  • 1 teaspoon lemon zest (from about 1 lemon)
  • 3 tablespoons lemon juice (from about 1 ½ lemons)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dijon mustard
  • 1 ½ teaspoons kosher salt
  • 2 teaspoons curry powder
  • ½ teaspoon granulated sugar
  • ½ teaspoon freshly ground black pepper, plus more for garnish

Step-By-Step Recipe Method

  1. To a large mixing bowl, add the chicken, reserved chicken juices, celery, green onions, apple, grapes, onion, cranberries, walnuts, tarragon, and parsley.
  2. Add the mayonnaise, greek yogurt, lemon zest, lemon juice, apple cider vinegar, dijon mustard, salt, curry powder, sugar, and pepper.
  3. Mix until very well combined and all ingredients are thoroughly incorporated.
  4. Serve alongside crackers for dipping or pile high into a sandwich (with some chips for added crunch). Enjoy!

Tips

  • You can substitute additional greek yogurt for mayo but I wouldn’t recommend it! The mayo gives it the perfect taste and fluffy texture.
  • I also love meal prepping this ahead of busy weeks to snack on. Just refrigerate it in an air tight container for up to 4 days.
