Buttery Lemon Pepper Fish

Some of my favorite meals require little prep, time, and only one dish. This buttery lemon pepper fish is a perfect weeknight dinner staple. It’s quick, savory, and packed with flavor. I typically use cod for this lemon pepper recipe but tilapia, halibut, or any other mild white fish would work well. I love serving this over a bed of rice or veggies. This time I paired it with Stags’ Leap Chardonnay, one of my favorites that I included in my 20 Wines Under $20 list. Hope you enjoy and let me know what you think!

What You'll Need:

+ 1 lb. cod

+ 2 tbsp. melted butter

+ 1 tbsp. extra virgin olive oil

+ 2 cloves garlic minced

+ 1/2 tsp. lemon pepper

+ 1/4 tsp. salt

+ 1 lemon sliced

+ 1/8 tsp. paprika

+ 1/8 tsp. oregano

+ handful parsley chopped

+ additional lemon for garnish

Steps:

1. Preheat oven to 425°C.

2. Season both sides of fish with salt, lemon pepper, paprika, and oregano.

3. Add your olive oil, melted butter, minced garlic, and lemon slices to a baking dish, then combine.

4. Place fish into the baking dish and pop it into the oven for approximately 15 minutes (adjust bake time based on thickness of fillets and until your fish flakes apart easily).

5. Spoon some of the mixture from the bottom of the dish on top. Plate and garnish with parsley and the juice of half a lemon.
