Cheesy Arugula Pasta

This Cheesy Arugula Pasta is one of our weeknight go-to dinners when we’re low on time but craving some flavorful pasta! It’s so easy and is a great way to incorporate greens into a quick meal. Don’t forget to be heavy handed with the freshly grated parmesan 😉 Enjoy!

What You'll Need:

+ Box of Spaghetti or Pasta of Your Choice

+ 1/2 cup Extra Virgin Olive Oil

+ 4 tbsp. Butter

+ 3-4 Garlic Cloves Minced or Pressed

+ Zest of 1 Lemon

+ Juice of 1 Lemon

+ 4-5 cups of Arugula (it wilts down)

+ Garnish with LOADS of finely grated parmesan and fresh cracked pepper pepper to taste


1. Heavily salt pasta water and cook al dente.

2. Heat olive oil and garlic in a separate pot on low heat (don’t want it to burn).

3. Reserve about a cup of pasta water and then transfer the pasta over to your pot with oil and garlic.

4. Add your butter, lemon zest, lemon juice and arugula.

5. Stir vigorously while adding in splashes of pasta water to thin it out if needed.

6. Serve and garnish with lots of parmesan and fresh cracked black pepper.
