Creamy Cheesy Mashed Potatoes thanksgiving side dish recipe

These Creamy Cheesy Mashed Potatoes are always one of my favorite Thanksgiving side dishes! It’s a family favorite thats fluffy and so delicious. Trust me on the cream cheese, it makes a huge difference and the unexpected cheddar gives it such great flavor. You could totally skip the garlic if you prefer, or roast it to tone it down but we love it.

What You'll Need:

+ 3 lbs. Potatoes, peeled & cubed (I personally like Yukon gold)

+ 3/4 cup Whole Milk

+ 1/2 cup Heavy Cream

+ 2 cloves Garlic, minced (optional)

+ 6 tbsp. Unsalted Butter

+ 1/2 cup Unexpected Cheddar cheese (if you don’t have a TJ’s near by, any sharp cheddar works well)

+ 3 tbsp. Cream Cheese

+ Salt & Pepper to taste

+ Fresh Chives for garnish

Steps:

1. Peel potatoes and cut into cubes (approximately 1” pieces).

2. Transfer to large pot and cover potatoes with cold water. Bring to a boil then lower heat, cook until fork tender.

3. Strain and place back into same warm pot. Mash potatoes – I like using a potato diced for this. It has different settings which allows you to control how much texture you want. You could also use a masher, electric hand mixer, or stand mixer. If you’re using any type of electric mixer be careful not to over-mix.

4. Add butter, garlic (optional), cheese, whole milk, heavy cream, cream cheese, salt and pepper. Stir until well combined.

5. Plate and garnish with chives. You can add more salt & pepper to taste, and of course, some more butter if you desire. Enjoy!
