Ingredients
- Lime zest, for the rim
- Shredded coconut, for the rim
- Lime, for the rim
- 2 ounces blanco tequila (I use LALO)
- ½ ounce orange liqueur
- 1 ounce cream of coconut (I use Coco Reàl or Coco Lopez)
- 1 ounce pineapple juice
- 3 ounces coconut milk
- Juice of 1/2 lime
- Lime wedges or rounds, for garnish
Step-By-Step Recipe Method
- On a small plate, mix the lime zest and shredded coconut together. Rim a glass with lime juice and dip the rim of the glass into the coconut and lime zest mixture.
- In a cocktail shaker filled with ice, add the tequila, orange liqueur, cream of coconut, pineapple juice, coconut milk, and lime juice. Shake until the outside of the shaker is ice cold and frosty, about 45 seconds.
- Fill the prepared glass with ice and strain the cocktail over top.
- Garnish with lime wedge or round and enjoy!
Tip
Toast your shredded coconut before rimming the glass to give it even more coconut flavor!
