Fig season is a time that I get way too excited about each year. They’re just so good, especially when they’re ripe and in something like this Easy Fig Tart. It’s one of the simplest things you can make and looks so pretty. The combination of flaky puff pastry, creamy vanilla filling, fresh figs, a little sprinkle of sugar on top is just so delicious!
The filling is the key to this recipe. It’s a mixture of cream cheese, powdered sugar, vanilla bean (or extract), and a little cardamom. All you have to do is spread it onto the puff pastry, then layer your figs on top, brush the edges with egg wash, and sprinkle demerara sugar overtop. Once it bakes, it turns golden and crispy, while the figs get jammy and sweet. I usually add some fresh thyme to finish but it’s totally optional.
It’s great to have with your morning coffee or even for dessert. You only need a few ingredients and about 10 minutes of effort. If you have figs on hand, this is one of those things you’ll want to make on repeat while they’re still in season.

A fresh fig tart is a dessert that’s made with puff pastry, a filling, and figs. The figs are baked right onto the filling which sits on the puff pastry. It occasionally has toppings such as thyme (as this recipe does), rosemary, honey, ice cream, or whipped cream.

Can you freeze a fig tart?
Although you can freeze a fig tart, it’s not ideal. Fresh figs become mushy and watery when they’re stored in the freezer so it’s best to avoid freezing, if possible. However, you could also prep the tart ahead of time and freeze it before adding the figs.

Ingredients
- 6 ounces cream cheese, softened
- 1 vanilla bean pod or 1 teaspoon vanilla extract
- 2 tablespoons powdered sugar
- ¼ teaspoon cardamom
- 1 egg
- 1 tablespoon milk
- 1 sheet puff pastry, thawed
- 8-10 Figs, sliced into ¼ inch pieces
- 1 tablespoon demerara sugar
- Fresh thyme for garnish

Step-By-Step Method
- Preheat the oven to 425°F.
- In a medium bowl, combine the softened cream cheese, vanilla bean, powdered sugar, and cardamom. Stir until smooth and well combined. Set aside.
- In a small bowl, whisk together the egg and milk to make the egg wash.
- Lightly roll out the thawed puff pastry on a floured surface. Using a sharp knife, gently trace a 1-inch border around the edges without cutting all the way through the dough.
- Spread the cream cheese mixture evenly within the traced border. Layer the fig slices over the filling. Brush the edges with the egg wash and sprinkle demerara sugar over the entire surface of the pastry.
- Bake until the pastry is golden brown and fully cooked through, 20 to 25 minutes. Let cool slightly before serving. Enjoy!
