Thai Inspired Chopped Chicken Salad

This easy Thai Inspired Chopped Chicken Salad is one of my favorite salads to make during Spring and Summer! It’s so colorful, vibrant, and packed with flavor. Not to mention it has the creamiest peanut dressing that would literally make anything taste amazing! It’s great for entertaining or to take to any gathering. Just prep it all in advance and dress it when you’re ready to serve! My favorite tip is using a rotisserie chicken to save time. Try it out and let me know what you think.

What You'll Need:

+ 1/2 Rotisserie Chicken, shredded

+ 1 Napa Cabbage, finely chopped

+ 1/2 red Cabbage, finely chopped

+ 3 Carrots, grated

+ 2 Mangos, diced (make sure they’re firm)

+ 1 bunch Green Onions, sliced

+ 1 cup Cilantro

+ 2 Red Bell Peppers

+ 1 tbsp Mint, roughly chopped

+ 1 cup Cashews or Peanuts, chopped (including for garnish)

+ Garnish with Sesame Seeds, peanuts/cashews & lime wedge

Dressing

+ 1/3 cup Peanut Butter

+ 2 tbsp Soy Sauce (low sodium)

+ 3 tbsp Sesame Oil (toasted)

+ 1/4 cup Rice Wine Vinegar

+ 2 Limes juiced

+ 2 tbsp Sambal/Chili Garlic

+ 1 1/2 tbsp Honey

+ 1 large knob Ginger, grated

+ 2 large Cloves Garlic, grated
