If you know Andrew, you know that he loves fajitas and a bit of heat. Now, I know these Fiery Sheet Pan Fajitas are NOT traditional fajitas (I’ll have to share those some other time) BUT I’ve never seen him devour a meal faster or be so excited about dinner! This is a quick, easy, and simplified version that only requires one sheet pan! Minimal prep, bake time and dishes – that’s a win-win in my book! They’re packed with flavor and you can do just about anything with them! We used them in a bowl with some leftovers and fresh guacamole but they’re also GREAT for tacos. This is the level of heat we like in ours but if you’re sensitive to spice I would recommend adjusting accordingly. Top with lots of lime, and cilantro & enjoy!

What You'll Need:

+ Olive Oil, to taste

+ 1 lb. Flank Steak, cut into thin strips

+ Red, yellow, orange, green Bell Peppers (approx. 3 total), thinly sliced

+ 1/2 Red Onion, cut

+ 4 cloves Garlic, minced

+ 2 Limes

+ Cilantro for garnish

Seasoning

+ 1/2 tsp. Chipotle Powder (this is optional but Andrew personally loves it, we add 1 tsp. for his)

+ 2 tsp. Chili Powder

+ 1/2 tsp. Cumin

+ 1 tsp. Paprika

+ 1 tsp. Sugar

+ 1/4 tsp. Cayenne

+ 1 tsp. Garlic Powder

+ 1/2 tsp. Onion Powder

+ Salt & Pepper to taste

Steps:

1. Preheat oven to 450 degrees and combine all spices in a bowl to create the seasoning mixture.

2. Drizzle olive oil on baking sheet. Place sliced steak, bell peppers and onion onto baking sheet. Add additional olive oil, minced garlic, juice of 1/2 a lime, and seasoning mixture. Thoroughly combine and make sure everything is evenly coated.

3. Place into oven and bake for approximately 10-12 minutes depending on how well done you want your steak.

4. Top with remaining lime juice and garnish with cilantro.

5. Enjoy on its own, in bowls, or with tortillas (our fave!)
