If you know Andrew, you know that he loves fajitas and a bit of heat. Now, I know these Fiery Sheet Pan Fajitas are NOT traditional fajitas (I’ll have to share those some other time) BUT I’ve never seen him devour a meal faster or be so excited about dinner! This is a quick, easy, and simplified version that only requires one sheet pan! Minimal prep, bake time and dishes – that’s a win-win in my book! They’re packed with flavor and you can do just about anything with them! We used them in a bowl with some leftovers and fresh guacamole but they’re also GREAT for tacos. This is the level of heat we like in ours but if you’re sensitive to spice I would recommend adjusting accordingly. Top with lots of lime, and cilantro & enjoy!

What You'll Need:

+ 1 lb. Flank Steak, cut into thin ½ inch strips (sliced against the grain)

+ 3 large bell peppers, thinly sliced

+ ½ large red onion, thinly sliced

+ 2 tbsp. Avocado Oil

+ Juice of 2 Limes

+ 2 tsp. Kosher Salt

+ 1 tsp. Freshly cracked black pepper

+ 2 tsp. Garlic Powder

+ 1/2 tsp. Chipotle Powder

+ 1 tsp. Chili Powder

+ 1/2 tsp. Onion Powder

+ 1/2 tsp. Cumin

+ 1 tsp. Paprika

+ ½ tsp. Sugar

+ 1/4 tsp. Cayenne

+ Corn and/or flour tortillas to serve

+ Guacamole, salsa, crema, cilantro and additional lime for garnish

Steps:

1. Preheat the oven to 450 degrees. Once preheated, place the empty sheet pan into the oven for 10 minutes to heat up.

2. Meanwhile, in a large mixing bowl, add steak, veggies, olive oil, lime juice and all of the seasonings. Mix until well combined.

3. Using oven mitts, remove the sheet pan from the oven. Carefully pour mixture onto the sheet pan and spread out evenly.

4. Bake for approximately 10-12 minutes or until cooked through to your desired doneness.

5. Using tongs, heat and lightly char corn or flour tortillas on the stovetop over medium heat. Assemble your tacos and enjoy!

NOTES: I also love serving these for a DIY “build your own fajita bowl” with rice, beans, and all of the toppings. If you’re in a pinch, use a packet of taco seasoning but this seasoning blend is so good!
