Gut-Friendly Rainbow Beet Salad

I’m so excited to be sharing this colorful Spring Gut-Friendly Rainbow Beet Salad that’s not only delicious but that also super healthy! It uses some of my favorite ingredients including kale, beets, quinoa, apples, onions, and almonds. It’s light, flavorful, crunchy, and is the perfect combination of earthy and sweet! Hope you enjoy this easy & healthy recipe we’ve been making on repeat!

What You'll Need:

+ 2 bunches Kale (washed, massaged, and finely chopped)

+ 2 cups Quinoa, cooked

+ 4-5 Beets (boiled, steamed, or roasted then sliced)

+ 1 Apple, diced

+ 1 Red Onion, sliced

+ 1 cup Slivered Almonds, toasted until fragrant and golden

+ 1/2 cup Cried Cranberries

Dressing

+ 1/4-1/2 cup Olive Oil

+ 2 tbsp. Champagne Vinegar

+ Juice of 2 Lemons

+ 2 tbsp. Honey

+ Salt & Pepper to taste
