Mediterranean Chicken & Potato Bake recipe

If you ask me, this Mediterranean Chicken & Potato Bake is the definition of a PERFECT dinner! I love Mediterranean food and this is a Greek inspired chicken my family and I have been making for years. This is great for an easy weeknight meal because all you have to do is throw everything together and pop it into the oven to bake. It’s also perfect for entertaining and is sure to be a favorite! It’s packed with herbs, garlic, lemon, and the potatoes are topped with feta (of course). You’ve GOT to try it!

What You'll Need:

+ 4 Chicken Thighs, bone-in skin-on

+ 1/2 Yellow Onion, sliced

+ 1 1/2 lbs. Petite Potatoes, quartered

+ 1/2 cup Olive Oil

+ Juice of 3 Lemons

+ Splash of White Wine

+ 3 Cloves Garlic, grated or minced

+ 1 tsp. Dried Oregano

+ 1 tsp. Dried Mint

+ Salt & Pepper to taste

+ Pinch of Paprika (plus more to top with before baking)

+ Plain Whole Greek Yogurt (to brush on before baking)

+ Fresh Feta in brine

+ Additional Lemon Wedges

+ Fresh Parsley, chopped for garnish

Steps:

1. Preheat oven to 425 degrees. Combine olive oil, lemon juice, wine, garlic, oregano, mint, salt, pepper, and paprika – whisk to combine.

2. Pour 1/2 of the mixture onto the chicken and let marinate for 30 minutes or longer (the longer the better depending on how much time you have)

3. Place quartered potatoes and sliced onion into a baking dish drizzled with olive oil. Pour the remaining mixture on top and stir to coat.

4. Place chicken on top of potatoes and brush with greek yogurt & sprinkle with oregano and paprika. Bake at 425 degrees for 45-55 minutes (depending on how large chicken is) and then broil for approximately 2 minutes.

5. Serve and garnish with parsley, top potatoes with feta. Enjoy!
