Lemon Garlic Sheet Pan Salmon

What You'll Need:

+ 4 6oz.-8oz. salmon filets

+ 2 lemons, sliced into rounds plus more for serving

+ ¼ cup unsalted butter, softened to room temperature

+ 1 clove garlic, grated

+ 1 tsp. Garlic powder

+ 1 tsp. Paprika

+ Salt to taste

+ Pepper to taste

+ Fresh parsley for garnish

+ 1 lb. broccolini

+ 2 tbsp. Olive oil

+ Rice for serving

Steps:

1. Preheat the oven to 400 degrees.

2. In a small mixing bowl, combine softened butter, garlic, garlic powder, paprika, salt and pepper.

3. On a sheet pan lined with parchment paper add the broccolini. Drizzle with olive oil and season with salt and pepper. Toss to combine then spread out to the perimeter of the sheet tray.

4. Place 4 rows of lemon rounds onto the sheet tray with salmon filets directly overtop. Using a silicone brush or spatula, cover all sides of the salmon with the softened butter mixture.

5. Bake for approximately 12 minutes or until cooked through. Broil for 2 minutes if desired.

6. Plate alongside white or brown rice, serve with lemon wedges and garnish with fresh parsley. Enjoy!
