This Soba Noodle Salad with Sesame Crusted Ahi is the perfect dish to make this summer! It’s so delicious and fresh. There’s nothing better than Ahi Tuna in the summer and it pairs perfectly with Soba Noodle!

How To Make My Soba Noodle Salad with Sesame Crusted Ahi

Tuna Ingredients

  • 10 to 16 ounces sushi grade ahi tuna, thawed and room temperature
  • 1/4 cup soy sauce
  • 1/4 cup sesame seeds
  • 1/4 cup avocado oil (or neutral oil of choice for searing)

Salad Ingredients

  • 1 (9.5-ounce) pack soba noodles
  • 1 red bell pepper, thinly sliced
  • 2 carrots, sliced into ribbons using a vegetable peeler (or thinly sliced)
  • 1 cup edamame
  • 2 limes, sliced for serving
  • 1 bunch scallion greens, sliced for garnish

Dressing Ingredients

  • 6 tablespoons toasted sesame oil
  • 6 tablespoons soy sauce
  • 3 tablespoons mirin
  • 1 tablespoon honey
  • 2 tablespoons rice wine vinegar
  • 1 bunch scallion whites, minced
  • 1 tablespoon freshly grated ginger
  • 1 clove garlic, freshly grated

Note

For the dressing, combine all the dressing ingredients and whisk together to combine.

Step-By-Step Recipe Method

  1. Using a paper towel, pat the tuna completely dry. Place the ahi tuna steaks into a shallow dish or plate and pour the soy sauce overtop, making sure they are fully coated. Then, generously coat all sides with sesame seeds, being sure to press down so they are fully covered.
  2. Heat avocado oil in a cast iron skillet over medium-high heat. Once hot, place steaks in the skillet and sear for approximately 45 seconds or until golden brown on the outside. Flip and sear for an additional 60 seconds. Carefully sear the edges until golden then remove and let rest. NOTE: Sear to your desired doneness – if you prefer more well done, increase the amount of time on each side.
  3. In a large pot of boiling water, cook the soba noodles 30 seconds less than directed on the package. Immediately drain the noodles and run under cold water until cooled.
  4. In a large mixing bowl. combine the soba noodles, bell pepper, carrot, and edamame. Pour the dressing (recipe above) overtop and toss to combine. Garnish with scallions and serve with a squeeze of fresh lime juice.
