Mom’s Lemon Garlic Quinoa Salad

Growing up, I was always amazed by how my mom would take a handful of ingredients and turn them into the most flavorful and delicious dish. Not to mention, it would take her no time to do so. This is a perfect example of one of her quick, simple, and easy recipes that proves eating healthy doesn’t have to be bland. She has been making this quinoa salad for years and it’s one of my absolute favorites. I especially love it for entertaining during the summertime and for meal prep. It’s crunchy, refreshing, and keeps well in the fridge which makes lunches and snacks a breeze. If you love lemon and garlic as much as we do, you have to try it! What You'll Need:

+ 2 cups quinoa, cooked

+ 2 cups celery, chopped

+ 1 large bushel curly parsley, finely chopped

+ 1-2 tbsp. fresh mint, finely diced

+ 1/2 vidalia onion, finely diced

+ 1 can garbanzo beans (or any beans you prefer), strained and rinsed

Dressing:

+ Splash of EVOO

+ Juice of 2-3 lemons

+ Zest of 1 lemon

+ 3-4 cloves garlic (depending on preference)

+ Salt & pepper to taste

Steps:

1. Cook your quinoa with better than bouillon or broth and a pinch of salt for more flavor. Makes such a difference!

2. Add the celery, parsley, mint, onion, and garbanzo beans to the quinoa.

3. Make the dressing by combining the EVOO, lemon juice, lemon zest, garlic, salt and pepper.

4. Pour the dressing over the quinoa mixture and enjoy!
