SIMPLE STONE FRUIT BURRATA SALAD WITH BASIL MINT VINAIGRETTE recipe

So simple. So delish. A MUST TRY! We had something similar a while back at Union, one of our favorite restaurants in Pasadena, and I instantly knew I’d have to recreate my simplified version of it at home. We made this Simple Stone Fruit Burrata Salad With Basil Mint Vinaigrette over the weekend for some friends and family and it was a hit. The best part? It comes together in under 10 minutes! The perfect appetizer for entertaining before stone fruit season is officially over! And as always, this dish especially goes to show that the most delicious dishes are often the most simple.

What You'll Need:

+ Pluerries (cross between a plum and cherry! Plums work well also)

+ White Nectarines

+ Yellow cherry tomatoes

+ Red wine vinegar

+ Fresh Burrata

+ Basil Mint Vinaigrette (approximately 2 cups basil, 1 cup mint, EVOO based on consistency – I used about 3/4 cup, salt, splash of red wine vinegar)

+ Honey

+ Flaky Sea Salt & Freshly Cracked Black Pepper to garnish

Steps:

1. Slice stone fruit and tomatoes.

2. Place into a bowl/serving dish. Add red wine vinegar over top until the bottom of the dish is covered in a thin layer.

3. Add burrata, drizzle a generous amount of the basil mint vinaigrette and honey. Season with salt and pepper and enjoy!
