This Veggie Quinoa Bowl with Lemon Garlic Dressing is one of the go-to’s in our house. It’s beyond easy, healthy and soooo flavorful! It’s also one of the only things I meal prep. I don’t like to plan too much but cooking quinoa and roasting veggies on Sunday or Monday to to have on hand throughout the week always comes in handy. I also love adding chicken to this dish. AND the dressing is one of our favorites! My mom made this growing up but never had an exact recipe for it. We tested it and finally came up with the exact quantities. It’s great on everything from bowls to salads. Enjoy!

What You'll Need:

+ Quinoa cooked with Better Than Bouillon for flavor

+ Baby Arugula

+ Garbanzo Beans

+ Roasted Veggies of your choice seasoned with salt and pepper (I love broccolini, cauliflower, rainbow carrots and asparagus – roasted at 400 degrees for 25-30 minutes, tossing halfway through. The amount of time depends on the vegetable you are roasting.)

Dressing (makes 2 servings)

+ 1/4 cup Olive Oil

+ 2-3 Cloves Garlic

+ Juice of 1 1/2 Lemons

+ 1/2 tsp. Salt

+ 1/4 tsp. Fresh Cracked Black Pepper
