Watermelon Cucumber & Feta Salad

I make this Watermelon Cucumber and Feta salad on repeat every summer. It’s the perfect side dish and great for barbecues and potlucks. It’s crisp, refreshing, and so easy to make! Here’s a video on exactly how I make it. You’ve got to try it!

What You'll Need:

+ 1 small seedless watermelon, cubed (approximately 6-8 cups)

+ 3 mini cucumbers, halved and sliced

+ ½ red onion, thinly sliced

+ Handful fresh mint leaves, chopped

+ Lots of feta (I use a generous amount to top and love using creamy French Feta)

+ Pinch of salt

Dressing:

+ 2 tbsp. EVOO

+ 2 TBSP. white balsamic vinegar

+ 1- 2 tbsp. Honey

+ Salt to taste

Steps:

1. In a large bowl whisk together the EVOO, white balsamic vinegar, honey and salt.

2. Then add the watermelon, cucumber, red onion and mint.

3. Top with lots of feta cheese and enjoy!

Tip: Soak onion slices in ice water to tone down the sharpness/strong flavor.
