Watermelon Cucumber & Feta Salad

I make this Watermelon Cucumber & Feta Salad on repeat every summer. It comes together in minutes which makes it the perfect side dish for barbecues, potlucks, lunches, dinners, or even just as a snack. This salad is impossible not to love because it’s crisp, refreshing, and SO easy to make! No matter what you pair this dish with, it might just end up being the one everyone talks about most!

The dressing couldn’t be easier to make. It includes just four ingredients: olive oil, white balsamic, honey, and a little salt. All you have to do is whisk the dressing together, pour it over the salad, mix, and you’re done! The watermelon and cucumber soak up the dressing just enough to taste lightly dressed, but not soggy. Then comes the good stuff: some red onion for a little bite, tons of fresh mint for brightness, and my favorite part: feta, of course!

And not just any feta! I always reach for feta in brine (it makes all the difference). If you can find French feta, grab it and run. It’s creamier and a bit less salty than the Greek version, and it melds into the salad just right.

If you’re not big on raw onion, try soaking the slices in ice water first. It takes away that sharp edge to make it a bit milder. Just pat them dry before adding them into the salad. Then finish it all off with a sprinkle of flaky salt (like Maldon) and extra mint on top.

How To Make My Watermelon Cucumber & Feta Salad

Ingredients – For The Salad

  • 1 small seedless watermelon, cubed (approximately 6 to 8 cups)
  • 3 mini cucumbers, halved and sliced into half moons
  • ½ medium red onion, thinly sliced
  • 1/3 cup chopped fresh mint leaves, plus more for garnish
  • Crumbled feta (from feta in brine), for garnish
  • Flaky sea salt (such as Maldon), for garnish (optional)

Ingredients – For The Dressing

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons white balsamic vinegar
  • 1 to 2 tablespoons honey (depending on preference)
  • 1/2 teaspoon kosher salt

Step-By-Step Recipe Method

  1. In a large bowl, whisk together the extra virgin olive oil, white balsamic vinegar, honey, and salt until combined.
  2. To the bowl, add the watermelon, cucumber, red onion, and mint. Gently toss to combine.
  3. Transfer to serving bowel and top with lots of feta cheese and fresh mint for garnish. Sprinkle with a bit of Maldon flaky sea salt (optional) and enjoy!

Tip

If you’re not an onion lover, you can soak the onion slices in ice water to tone down the sharpness and strong pungent flavor. Just be sure to pat dry with a paper towel before adding into the salad.

Which Feta do you recommend?

My favorite part about this salad is, of course, finishing it off with tons of feta! It pairs perfectly with the sweetness from the watermelon, fresh cucumbers, and honey. While any type of feta will work well with this refreshing dish, I highly recommend using feta in brine. If you can get your hands on French Feta, it’s my all time favorite! It has a creamier texture, milder brininess, and softer consistency than traditional feta. If you can find French feta, it’s absolutely worth using!
