Run, don’t walk and make this delicious summer Strawberry Salad with Lemon Poppyseed Vinaigrette. It’s a super simple to make and sure to be a true crowd pleaser! It’s perfectly crunchy, refreshing, and so delicious. The lemon poppyseed vinaigrette dressing truly makes the dish.

If you prefer to make this ahead of time, you totally can! All you have to do is mix together your dressing in a small bowl and prep all your other ingredients. Just don’t mix the dressing with the salad until you’re ready to serve! Hope you love it as much as we do!

How To Make This Strawberry Salad with Lemon Poppyseed Vinaigrette

Ingredients – For The Salad

  • 2 hearts romaine, chopped
  • 16 ounce container strawberries, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup goat cheese, crumbled
  • 1 cup pecans, roughly chopped
  • Handful of fresh mint, about 10 leaves, finely chopped

Ingredients – For The Lemon Poppyseed Vinaigrette

  • 1/3 cup extra virgin olive oil
  • 2 tablespoons fresh squeezed lemon juice
  • 1 tablespoon white balsamic
  • 3 tablespoons honey
  • 1 teaspoon. dried mustard
  • 2 teaspoons poppy seeds
  • Salt & pepper to taste

Step-By-Step Recipe Method

  1. Chop the Romain lettuce and pecans. Slice the strawberries, red onion, and mint.
  2. Whisk together all the vinaigrette ingredients.
  3. Combine everything in a large mixing bowl, then toss, serve, and enjoy!
