Crunchy Rainbow Parmesan Salad recipe

I could eat this Crunchy Rainbow Parmesan Salad every day and NEVER get tired of it. Not only is it incredible easy to make, but it’s vibrant and healthy. It’s the perfect summer salad that doesn’t lack in flavor. You’ve got to try this recipe!

What You'll Need:

+ 3-4 romaine hearts, chopped

+ 1 cup mini sweet peppers, thinly sliced

+ 1 cup celery, chopped

+ 1 cup cherry tomatoes, halved

+ 1 cup mini cucumbers, chopped

+ 1/2 cup red onion, thinly sliced

+ 1/4 cup fresh parsley (packed), finely chopped

+ 3/4 cup Parmigiano Reggiano, freshly and finely grated plus more to top

Dressing:

+ 1/4 cup EVOO

+ Juice of 1 lemon

+ 1 clove garlic, grated

+ 1/2 tsp. Oregano

+ Salt & Pepper to taste

Steps:

1. In a large mixing bowl, combine all ingredients.

2. Mix dressing until emulsified and pour over top.

3. Toss thoroughly and add freshly grated Parmesan.

4. Toss again until fully coated and serve.

5. Garnish with additional salt, pepper and freshly grated Parmesan. Enjoy!
