I could eat this Crunchy Rainbow Parmesan Salad all the time and NEVER get tired of it. Not only is it incredibly easy to make, but it’s also vibrant, healthy, and super delicious. It’s the perfect salad to make any time of year that doesn’t lack in flavor. You’ve got to try this recipe!

How To Make My Crunchy Rainbow Parmesan Salad

Ingredients – For The Salad

  • 3 to 4 romaine hearts, chopped (about 8 cups)
  • 1 cup mini sweet peppers, thinly sliced
  • 1 cup celery, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup mini cucumbers, halved and sliced
  • 1/2 cup red onion, thinly sliced
  • ¼ cup fresh parsley (packed), finely chopped
  • 3/4 cup Parmigiano-Reggiano, freshly and finely grated plus more to top

Ingredients – For The Dressing

  • ¼ cup extra virgin olive oil
  • Juice of 1 lemon
  • 1 clove garlic, grated
  • ½ teaspoon dried oregano
  • Salt & Pepper to taste

Step-By-Step Recipe Method

  1. In a large mixing bowl, combine the romaine, peppers, celery, tomatoes, cucumbers, onion, and parsley. Set the bowl aside.
  2. In a separate bowl or liquid measuring cup, mix the dressing until it’s emulsified and pour overtop the salad.
  3. Toss everything together and add the Parmigiano-Reggiano.
  4. Toss again until the salad is fully coated and serve.
  5. Garnish with additional salt, pepper, and Parmigiano-Reggiano. Enjoy!
