Toast is one of the most versatile breakfast and brunch dishes out there. I love having fun with it and putting a variety of ingredients together to build both sweet and savory versions. I shared this breakfast toast trio a few months back and it’s continued to be one of my favorite quick and easy meals. Not to mention, it’s pretty aesthetically pleasing to serve! The best part is that you can use just about anything you have on hand to create some delicious and unique combinations. Here are 3 of my go-to’s:

What You'll Need:

Breakfast Toast 1:

+ Toasted Sourdough

+ Burrata

+ Roasted Cherry Tomatoes

+ Basil

+ Extra Virgin Olive Oil

+ Balsamic Glaze

+ Salt & Freshly Cracked Pepper

To roast the cherry tomatoes I put them into a baking dish with extra virgin olive oil and a generous amount of coarse sea salt. Then, pop them into the oven at 400 degrees for approximately 20 minutes.

If I have some of my pesto sauce on hand, I love adding that as well. You can also replace the basil leaves with it if desired.

Breakfast Toast 2:

Toasted Sourdough

Ricotta or Goat Cheese (you can whip this to make it extra creamy if desired)

Peaches (Figs, Berries and pears are great on this also!)

Drizzle of Honey

Cinnamon

Pinch of Salt

Breakfast Toast 3:

+ Toasted Sourdough

+ Mashed Avocado

+ Fresh Lemon Juice

+ Fried Egg with Oregano

+ Crushed Red Pepper

+ Drizzle of Extra Virgin Olive Oil

+ Salt & Freshly Cracked Pepper
