Chipotle Chicken Dip

If you’re a fan of Buffalo Chicken Dip, then you have to try my Chipotle Chicken Dip for your next game day! It’s perfect for entertaining and so easy to make. You can even use the leftovers in sandwiches and they’re just as delicious. Be sure to serve this dip with plenty of chips for snacking! I hope you try it and love it as much as we do!

How To Make My Chipotle Chicken Dip

Ingredients

  • 2 ½ cups chicken, shredded
  • 1 8-ounce package cream cheese, softened
  • 1 cup mayonnaise
  • ½ cup hot sauce of choice
  • 1 cup cheddar cheese, divided
  • 1 cup monterey jack cheese, divided
  • 3 to 5 chipotle peppers in adobo sauce (depending on preference)
  • 1 red bell pepper, diced
  • Juice of ½ Lime
  • 1 teaspoon Garlic powder
  • ½ teaspoon Chipotle powder
  • Salt and pepper to taste
  • 1 Fresno chili pepper, thinly sliced (optional)
  • 1 bunch green onions, sliced

Step-By-Step Recipe Method (Serves 8 to 10)

  1. Preheat the oven to 350 degrees.
  2. In a food processor or blender, combine the mayonnaise, softened cream cheese, hot sauce, chipotles in adobo, lime juice, garlic powder, chipotle powder, salt and pepper. Blend the mixture until it is smooth and the ingredients are thoroughly combined.
  3. In a large mixing bowl, add the shredded chicken, cheese, bell pepper and chipotle sauce. With a rubber spatula, stir to combine.
  4. Transfer the mixture to a baking dish and top with the remaining cheese. Bake it for 20 minutes or until the cheese is melted and bubbly.
  5. Garnish with the green onions and Fresno pepper, then serve with chips for dipping!
