Citrus Shaved Brussels Sprouts

This Citrus Shaved Brussels Sprouts is a must try! It’s so light, flavorful, crunchy, and packed with seasonal ingredients. The citrus honey vinaigrette truly makes this dish and it’s great for entertaining because it holds up much better than lettuce! Enjoy!

What You'll Need:

+ 8 cups thinly shaved brussels sprouts

+ 1 small red onion

+ 3-4 citrus fruits – I used 1 grapefruit (sectioned), 1 Cara Cara orange (sectioned), 1 blood orange (sliced into rounds), and 1 navel orange (sectioned)

+ 1 cup walnuts, roughly chopped

+ 1 cup pomegranate seeds

+ Salt & pepper to taste

+ Fresh mint to garnish

+ Feta or goat cheese (optional)

Dressing:

+ 1/2 cup EVOO

+ Juice of 1-2 of the remaining citrus fruits

+ 3 tbsp. white balsamic vinegar

+ 1 shallot, finely diced

+ 1 tbsp. honey

+ Salt & pepper to taste

Note: Use whatever citrus fruit you have on hand – anything works! If you’re into wine, we recommend pairing this with a Sauvignon Blanc or Pinot Grigio. We’re having Tenuta Ulisse Pinot Grigio from Central Italy. It’s dry and not overly sweet with notes of stone fruit and citrus.
